Help us welcome Jenny Ernst to the Ole Miss School of Education as an Instructor in Teacher Education!

A lifelong Rebel at heart, Dr. Ernst earned her bachelor’s, master’s and doctoral degrees right here at the University of Mississippi. She holds a B.A. in Elementary Education, an M.A. in Early Childhood Education and a doctorate in Elementary Education.

Her mission as an educator is to prepare preservice teachers to create classrooms where learning, love and curiosity thrive.

When she’s not preparing the next generation of educators, Dr. Ernst enjoys cross-stitching, baking, playing mahjong with friends, and spending time with her family. She and her husband, Konrad, are parents to two little girls, Ann Ramsey and Sylvie.

We’re so excited to welcome Dr. Ernst into her new role and have her as part of the School of Education family!

We’re excited to welcome Katie Amidon, Ph.D., to the Ole Miss School of Education as a Clinical Assistant Professor of Early Childhood Education!

Dr. Amidon’s mission in education is to foster a disposition for learning in her students and to support teachers so that they can provide environments where children can learn and thrive. She brings a unique academic background to her work, earning her bachelor’s degree in Business Administration from the University of Wisconsin-Madison before returning to the University of Mississippi for her master’s in Early Childhood Education and Ph.D. in Education with an emphasis in Early Childhood Education.

Outside of the School of Education, Dr. Amidon loves spending time with family and friends. Whether traveling, playing board games or competing in local trivia nights, she’s always up for making memories and having a little fun!
While she has been part of the SOE community for several years, Dr. Amidon is excited to step into this new role and explore new opportunities alongside students and faculty.

SOE grad Sam Sepe is heading to Greece!

The 2026 curriculum and instruction master's graduate earned a Fulbright English Teaching Assistantship and plans to bring the experience home to Mississippi classrooms. "Authentic learning begins with relationships," she said.
