Caramel S'mores Bars
Feeling indulgent? These Caramel S'mores Bars are your dream come true! 🤤🍫🔥 Crunchy, gooey, and oh-so-chocolaty, they’re the perfect treat.
Ingredients:
Graham Layer:
1 ½ cups (190g) graham cracker crumbs
⅓ cup (80g) unsalted butter
Caramel Layer:
1 cup (200g) sugar
¼ cup heavy cream
½ cup (113g) salted butter (reduce fine sea salt to 1/4 tsp if using unsalted)
½ teaspoon fine sea salt
1 teaspoon pure vanilla extract
Marshmallow Layer:
2 envelopes (17g) powdered gelatin
⅓ cup (85g) cool water (for gelatin)
1 vanilla bean or 2 teaspoons pure vanilla extract
⅓ cup (88g) water (for sugar)
¼ cup plus 1 tablespoon (95g) honey
1 cup (226g) heaped brown sugar
¾ teaspoon fine sea salt
100g dark chocolate, finely chopped
Directions:
Prep: Line a greased 8 or 9” square pan with overlapping parchment paper. Preheat oven to 350°F (175°C).
Graham Layer: Mix graham cracker crumbs with melted butter until like wet sand. Press into pan and bake for 10 minutes. Cool completely.
Caramel Layer: Dissolve sugar with lemon drops on medium heat; add warmed heavy cream slowly, then butter, salt, and vanilla. Pour over graham layer. Let firm.
Marshmallow Layer: Mix gelatin with water and vanilla. Cook sugar, water, salt, honey, and vanilla bean until 245-250°F. Whip with gelatin, then swirl in melted chocolate. Pour over caramel. Chill 4 hours.
