Kenyan Collard Greens (Sukuma Wiki)
Sukuma wiki is a delicious East African dish, made with a fragrant and delightful combination of collard greens, tomatoes, and spices. Serve it over brown rice or cauliflower rice. Ground turkey, ground chicken or lean beef are optional.
Ingredients:
6 cups chopped collards
1 pound ground turkey cooked (optional)
2 Tablespoons olive oil
1 onion, diced
4 grape tomatoes, quartered
1/2 teaspoon cayenne pepper
1/2 teaspoon onion powder
1 cube bouillen
1 teaspoon salt
1 teaspoon black pepper
Makes 4 servings
Directions:
1. Sauté onions in olive oil on medium heat.
2. Add chopped tomatoes and stir for about 2 minutes.
3. Add cayenne pepper, bouillon, salt, and black pepper.
4. If using ground turkey, add and stir.
5. Cook for 5-10 minutes on low heat.
6. Add chopped collard greens.
7. Stir and cook for 3-5 minutes or until your preferred crunchy level.
8. Serve over cooked cauliflower rice or brown rice.

Ingredientes:
6 tazas de collards picadas
1 libra de pavo molido cocido (opcional)

Cooking healthful meals takes time. When life gets busy, planning meals can help you and your family eat well. Think about your schedule and how much time you need to prepare meals. Pico de Gallo
Ingredients
8-10 “Roma” or plum tomatoes, diced small
1/2 teaspoon salt
1 medium white onion, diced small
1 jalapeño, minced and seeds removed
1⁄2 cup fresh cilantro, leaves only, minced
1 lime, juiced
1 to 2 ripe avocados, chopped
Tortilla chips, for tasting
Yield: 8 cups
Directions:
1. Core and dice the tomatoes. Add 1/2 teaspoon salt to the diced tomatoes and set aside for as long as possible.
2. Dice the onion. Separate the leaves and stems of the cilantro and mince the leaves. Discard cilantro stems. Cut the stem from the jalapeño, cut the jalapeño in half, and remove the seeds. Discard seeds and mince. Wash hands well after handling the jalapeño.
3. Combine jalapeño, onion, and cilantro in a bowl.
4. Cut lime in half and squeeze juice into a bowl. Cut the avocado into two pieces. Remove the avocado seed and discard, then scoop out the insides of the avocado with a small metal spoon.
5. Cut avocado into 1⁄2 inch cubes. Discard avocado peel. Add avocado cubes to the bowl with the lime juice.
6. In a large bowl, combine the tomatoes, onion, jalapeño, cilantro, avocado, and lime juice.
7. Gently stir so all ingredients are evenly distributed. Serve and enjoy!

Pico de Gallo
Ingredientes:
8-10 tomates “Roma” o pera, cortados en cubitos pequeños
1/2 cucharadita de sal
1 cebolla blanca mediana, cortada en cubitos pequeños
1 jalapeño, picado y sin semillas
1⁄2 taza de cilantro fresco, solo las hojas, picado
1 lima, exprimida
1 a 2 aguacates maduros, picados
Chips de tortilla, para degustar
Producir: 8 tazas
Instrucciones:
1. Descorazonar y cortar los tomates. Agrega 1/2 cucharadita de sal a los cubitos. tomates y reservar el mayor tiempo posible.
2. Cortar la cebolla en dados. Separar las hojas y los tallos del cilantro y pica las hojas. Deseche los tallos de cilantro. Corta el tallo del jalapeño, Corta el jalapeño por la mitad y quítale las semillas. Deseche las semillas y picar. Lávate bien las manos después de manipular el jalapeño. Combine jalapeño, cebolla y cilantro en un bol.
3. Corta la lima por la mitad y exprime el jugo en un bol. Cortar el aguacate en dos piezas. Retire la semilla del aguacate y deséchela, luego saque la el interior del aguacate con una cuchara pequeña de metal. Cortar el aguacate en 1⁄2 cubos de pulgadas. Deseche la cáscara del aguacate. Añade los cubos de aguacate al bol con el jugo de lima.
4. En un tazón grande, combine los tomates, la cebolla, el jalapeño, el cilantro, aguacate y jugo de lima.

Meal prepping, or batch cooking, is where you make many servings of a meal at one time. This meal can then stretch throughout the week. Meal prepping is a great way to portion your meals to ensure that you have enough to eat over a period of time.

For example, if you are making meatballs for dinner, double the amount of tomato sauce you make. Freeze the extra or add a grain and vegetable to make another meal for that week.

Also, if a recipe requires a lot of effort, prep parts of it ahead of time. Try washing, chopping, and measuring days before you cook your recipe to save time.
