The Good Food Awards is launching its annual call for entries to American producers crafting tasty, authentic and responsible food and drink. Entry period runs from June 1-30 at goodfoodfdn.org/awards, with a $78 fee to cover storing, sorting and transporting entries for a socially distanced August Blind Tasting in San Francisco. Crafters can receive $10 off one entry by entering the code NASDA at checkout and BIPOC-identifying crafters reach out to [email protected] to receive one complimentary entry.

Based on the growing interest in hosting food producer related events the Food Innovation Center will collaborate with other organizations on these types of events.

July 17th & 18th Pop Up dinners

On July 17 and 18, guests gathered to celebrate, mingle, and indulge with fellow foodies at Oregon State University’s Food Innovation Center in Portland and the CH2M Hill Alumni Center in Corvallis, respectively. Guests enjoyed specialty foods developed at Oregon State and with OSU food scientists, demonstrating the many ways the university fosters a spirit of innovation in the food and beverage industry.

These events were made possible in large part due to our sponsors: A Slice of Heaven Farms, Pacific Coast Fruit, Trident Seafoods and the Oregon Trawl Commission. Guests to 2019 Time to Market Showcase

Swing by the Food Innovation Center on Thursday, June 20th for your chance to taste the latest in culinary creations before these foods hit the store shelves!!

You will be able to taste the foods created by the students who are graduating the current Getting Your Recipe To Market course along with samples offered by GYRM Alumni and FIC Clients.

There will be more than 60 food entrepreneurs sampling their products and many of these products will also be available for sale so it’s a great time to stock up on your favorite treats.

Getting Your Recipe to Market is a partnership between OSU, Portland Community College and grocer New Seasons Market.
The hands-on program takes place biannually at PCC.

The Showcase is a free event and samples, tastes & sales happen from 5:00 PM – 7:30 PM on Thursday, June 20, 2019,

Attending the Showcase is free but we ask that guests sign up for tickets to make sure the food producers have enough samples for tasting.

Research shows eating delicious Oregon Hazelnuts can improve health for seniors.....just in case anyone needs more reasons beyond the wonderfully delightful taste !!

Older adults who added hazelnuts to their diet for a few months significantly improved their levels of two key micronutrients, new research at Oregon State University indicates.

Your favorite brine Recipe

1) Mix the following ingredients for the brine:
1 cup kosher salt.
1/2 cup light brown sugar.
1 gallon vegetable stock.
1 tablespoon black peppercorns.
1 1/2 teaspoons allspice berries.
1 1/2 teaspoons chopped candied ginger.
1 gallon heavily iced water.
add sliced oranges, lemon, apples, and berries.

Sarah Masoni's Umami Turkey Recipe

INGREDIENTS

1 12-14 lb. turkey, thawed
1 bunch of fresh sage, chopped
1 bunch of fresh rosemary, chopped
1 bunch of fresh thyme, chopped
6-8 cloves of garlic, minced
½ lb of butter, at room temperature
4-6 stalks of celery
3 carrots
2 oranges, sliced in rings
1 lemon, sliced in rings
2 apples, sliced in rings
½ cup of frozen berries of your choice (raspberry, blackberry, or marionberry)
2 lbs of extra-thick-cut bacon
Your favorite brine

STEPS

1) Make the brine per instructions on package and chill overnight. Then to complete add sliced oranges, lemon, apples, and berries.
2) Put the turkey in the chilled brine for a minimum of 8 hours and as long as 36 hours.
3) Before the turkey is removed from the brine create a compound butter. Mix 3 tablespoons of sage, 3 tablespoons of rosemary, 3 tablespoons of thyme, and all of the garlic with the butter.
4) Remove turkey from brine and rinse. Place turkey in baking pan. Insert all of the compound butter under the skin of the breast meat as far back as you can place it without tearing the skin.
5) Insert carrots, celery, rosemary, and fruit from the brine into cavity of turkey and place bird into the oven. Cook at 500 degrees for 30 minutes.
6) While the turkey is cooking in the oven, prepare a lattice of bacon. Place a piece of plastic film on your counter to build the lattice on. Place 7 strips of bacon next to each other. Then take an additional strip and weave it through the lattice. Repeat until lattice is complete.
7) Remove turkey from oven. Using the plastic film, place bacon lattice on top of turkey with one corner at the front of the turkey breast. Wrap turkey legs in bacon.
8) Insert thermometer into thickest part of the turkey through the leg and into the breast. Place turkey into outdoor smoker for one hour at 170 degrees to cold smoke it. Then turn heat up to 375 degrees and cook for an additional 2 ½ to 3 hours. The turkey is done when the meat thermometer indicates an internal temperature of 165 degrees.
