Start with a batch of Country Beef Breakfast Sausage, then mix up a rich gravy and serve over warm biscuits, English muffins, or even asparagus.

COOKING:
Prepare Basic Country Beef Breakfast Sausage. Remove from skillet; keep warm.

Basic Country Beef Breakfast Sausage: Combine 1 pound Ground Beef (93% lean or leaner), 2 teaspoons chopped fresh sage or 1/2 teaspoon rubbed sage, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon salt, 1/4 to 1/2 teaspoon crushed red pepper in large bowl, mixing lightly but thoroughly. Heat large nonstick skillet over medium high heat until hot. Add sausage mixture; cook 8 to 10 minutes, breaking into 1/2-inch crumbles and stirring occasionally.
Cook's Tip: Cooking times are for fresh or thoroughly thawed ground beef. Ground beef should be cooked to an internal temperature of 160°F. Color is not a reliable indicator of ground beef doneness.
Heat oil in same skillet over medium heat. Stir in flour; cook and stir 4 minutes. Stir in milk; bring to a boil, whisking constantly. Reduce heat; simmer 2 to 3 minutes or until sauce thickens slightly, stirring occasionally. Stir in sausage, salt and pepper. Cook 1 to 2 minutes or until beef is heated through, stirring occasionally.
Serve over biscuits, muffins or asparagus, as desired.

This crazy-good concept takes the grilled Reuben and whips it up, popper style.

Ingredients
1 lb. deli corned beef sliced very thin
1 1/2 cups shredded Swiss cheese
1 1/2 cups sauerkraut rinsed
8 oz. cream cheese softened
1 Tbsp. Dijon mustard
2 tsp. caraway seeds optional
1/2 cup all-purpose flour
1/2 tsp. kosher salt
1/4 tsp. ground black pepper
1 1/2 cups buttermilk
1 1/2 cups plain panko bread crumbs
Instructions
Fill a large pot 1/3 full with canola oil and place over medium heat until 350 degrees F.
Place the corned beef in a food processor and puree until finely chopped.
Place corned beef in a large bowl and add the Swiss cheese, sauerkraut, cream cheese, Dijon mustard, and caraway seeds if desired. Mix well. Shape into 2 inch balls.
In a small bowl whisk together flour, salt and pepper. Place buttermilk in another small bowl and the panko in another bowl.
Dip each ball into the flour, then the buttermilk and then the panko. Repeat with all poppers.
Fry the poppers, about four at a time, making sure they are totally submerged in the oil for 4-5 minutes or until golden brown.
Remove from pot to a paper towel-lined plate. Repeat with all poppers.
Serve with Russian dressing for dipping.

At the request of the Oregon Cattlemen’s Association, the legislature enacted the Oregon Beef Council’s enabling statute, ORS 577, in 1959. The Beef Council is one of 26 commodity commissions that promote Oregon agricultural products under the supervision of the State Department of Agriculture. In 1986, the federal Beef Promotion and Research Act authorized the collection of a $1.50 per head checkoff at the time of sale of each bovine animal. Of each dollar collected, 50 cents is sent to the Cattlemen’s Beef Board located in Denver to fund national programs of promotion, education and research. The remaining $1.00, less a collection fee, is sent to the Oregon Beef Council.
