Cappadona Ranch Creamy Olive Chicken Florentine ✨

One of those cozy, flavor-packed pasta dishes that tastes like something from a little rustic Italian restaurant. Creamy garlic butter sauce, lemon, olives, spinach, artichokes, wine, and golden chicken over pasta… absolutely incredible. 🍋🫒🍝

Ingredients:
6 chicken breasts, sliced thinner or into smaller cutlets
1–1½ cups flour
Salt & black pepper
1 stick butter
10 fresh garlic cloves, minced
1 medium onion, diced
Cherry tomatoes, halved
½ bottle white wine
1 jar (7.4 oz) muffaletta olive salad
10 artichoke hearts, halved
8 oz baby spinach
½ block cream cheese
¼ cup heavy cream
1 tsp Knorr chicken powder
¼ cup roasted walnuts
2 lemons, thinly sliced
Linguine, spaghetti, or fettuccine

Directions:
Pat chicken dry, season flour with salt and pepper, then lightly dredge chicken.

Melt butter in a large skillet over low-medium heat. Add minced garlic and cook until fragrant and lightly caramelized.

Increase heat to medium and cook chicken about 4 minutes per side until golden brown. Remove and set aside.

In the same skillet add onions and cherry tomatoes. Cook until softened, then pour in white wine and simmer until reduced by half.

Stir in muffaletta olive salad, artichokes, and spinach. Cook until spinach wilts.

Add cream cheese, heavy cream, and Knorr chicken powder. Stir until creamy and smooth.

Add roasted walnuts and lemon slices and simmer for about 5 minutes.

Serve over your favorite pasta and top with the golden chicken.

Pairs beautifully with:
🥗 A crisp Caesar salad, arugula salad, or simple spring mix with lemon vinaigrette
🍷 A chilled Pinot Grigio, Sauvignon Blanc, Chardonnay, or even a light Rosé
🥖 Warm crusty bread to soak up every bit of that creamy olive sauce

This dish is rich, creamy, briny, garlicky, and full of Mediterranean flavor. Definitely one we’ll be making again at Cappadona Ranch. ❤️
