Glynn County History—Sharing Our Recipes at the Table

A fun way to find common ground with folks is always over a delicious dish! I thought it would
be nice to run a series of some of our favorite dishes from local cookbooks and chefs.

Here's a wonderful dish for artichokes stuffed with shrimp (found on page 107 in the 1977 edition of Frederica Fare):

Artichokes Stuffed with Shrimp

6 medium artichokes
1 1/2 lbs. raw shrimp
8 T. lemon juice
1 c. mayonnaise
4 t. salt
1/2 t. tarragon
1/4 t. black pepper

Trim artichokes (stems and tops) and cook in boiling water. Add to this 2 T. lemon juice and 2 t. salt. Cook for 30-40 minutes. Drain well. Remove artichokes and chill. Cook shrimp in water with 1 T. lemon juice and 2 t. salt. Reserve 1/2 c. water shrimp were cooked in. Drain, peel, and clean shrimp. Reserve 18 shrimp for garnish. Place remaining shrimp in blender with reserve liquid , 5 T. lemon juice, seasoning, and mayonnaise. Blend until shrimp are broken up. Chill well, and when ready to serve fill artichokes with mixture and garnish with whole shrimp.

**Starting Wednesday, September 9, 2026**

One of the most effective ways to learn a new language is the way children do: by listening, practicing, and learning through real conversation. Open to those with little to no Spanish proficiency, just come ready to practice and have fun! Library programs are free and open to the public.
