Peach and salmon is a pairing I never would have reached for.
Truthfully, I was out of mangoes and I thought… what if (usually this is when something brilliant is about to happen)
I have no words. Okay, I have some, but they won’t do this justice.
It’s sweet, but delicately. Almost floral. Enough to cut the fat of the salmon without competing with it. Tomato and bell pepper hold the savory line. Mandarin brings in the sharper citrus.
The near-monochrome plate does something to me. One caveat: my peaches had this wild crimson flesh. Yours probably won’t be this loud, but they will taste just as good.
