(I have been in the fire extinguisher industry for nearly 20 years and am factory trained and licensed to distribute proper fire extinguishers for proper settings)
This image below is a "Class K" Fire Extinguisher.
A Class K Fire Extinguisher has a very specific design and use. This particular type of fire extinguisher is NOT to be used as your first line of defense against a "FRYER" Fire. (OR ANY OTHER APPLIANCE THAT IS NOT PROPERLY INSTALLED UNDER A COMMERCIAL EXHAUST HOOD)
* In order to require a Class K fire extinguisher you MUST HAVE a fixed wet chemical automatic fire suppression system. This fire system is designed for, in the event of a fire, to automatically shut off any source of fuel, specifically any electricity feeding any appliances under the exhaust hood. Thus, making it safe to use wet chemical fire suppressant chemicals.
In the event of a fire, once the fire suppression system is activated and extinguishes the fire, there is always a possibility that that fire could flare back up. In this case the fire suppression system is spent and cannot be used again. This is when a Class K fire extinguisher is used to extinguish any remaining flame NOW THAT IT IS SAFE FOR USE OF WET CHEMICAL BECAUSE THE ELECTRICITY HAS BEEN SHUT DOWN.
If there IS NOT an automatic wet chemical fire suppression system, then the appropriate fire extinguisher to be used, is a stored pressure Dry Chemical ABC Fire Extinguisher with a MINIMUM 3A 40B:C RATING.
