"This jewel of Italian cuisine was born in the town of Castelfranco Veneto in the Veneto region of Italy. It's believed to have originated in the late 18th century when a local farmer made an accidental discovery.
Legend has it that a farmer found a partially mutated chicory plant growing among his regular crop. The leaves of this mutant plant were tender, mild, and adorned with beautiful speckled patterns, unlike anything he had seen before. He decided to cultivate it and the rest is history.
