What do I mean by red meat pork…

This is our Meishan breakfast sausage (actually slightly overcooked because I have ADD and got occupied). This sausage was cooked to OVER 160 degrees, which is the recommended heat for ground pork and still very pink on the inside.

Breakfast was served. I’m also getting to the point that despite have over 100 birds I’m about to be a regular egg buyer (not seller). We’re drastically bumping up the protein to see if that helps our ladies out. They have definitely stopped way too early on me.

Homemade honey buttermilk biscuits, scrambled eggs, Meishan pork breakfast sausage, salsa Rich Earth Farm and a strong coffee.

It’s the dreaded day today. You know the day. It’s actually the double dreaded day today.

Farming is so unique. The dreaded moments can turn into the most rewarding moments. As we get ready to restock our freezers because popsicles and fudge pops were needed, but door closures weren’t, I’m reminded of all the hours, love, blood, sweat, tears, and bad words we put into farming and the moment you get to offer that hard work to your family, friends, and community it’s the best way I know to show my love and support for those around me. Offering what I’ve put so much of my life into is the best way I know to show how much I’m grateful for the opportunity to serve others.

So, as we do a double dreaded day of farming I am looking forward to when I get to restock my freezers for our family and our community.

We’ve got litters of Meishan pigs in every direction over here. It’s a full house. What we are excited about is the upcoming litter of Meishan Preservation Goose x Pig Wing Marie Antoinette (which you may hear/see me calling her Sleepy or Sue Letta). I’m unsure how 2 of those names came about, but what I do know is how Sleepy came about. I’ve never seen a Meishan pig sleep more than she does. I kid you not I have to wake her up for every meal. Everyone else hears the dinner bell and sometimes she does, then gives and ear lift and goes back to sleep. She is so mellow and so mild mannered with the longest ears. Her and Pig Wing Priddy both have big, long ears. I just love that!
I’m excited to see the 2 pair up and see what they bring to our farm.

We’re expecting this litter mid September. Males will promptly be castrated so if you’re interested in offspring please reach out to the farm to see id they would be a fit for your farm.

We personally love these 2 parents and are excited to see what they bring!

Good Friday morning!!!!!

Wednesday’s event was rained out. Well, more like lightening & thunder and high winds. While I was at my Wednesday market I was notified our hay was getting a good bath 😞.
Thankfully we had people pick up their hay that morning before the rain came. Unfortunately we had a couple no shows and I didn’t plan on people not following through with what they said so there’s 90 bales that were on project save the bales. They didn’t get too much rain. We’ve been drying them in the sun and last night the kids and I stacked all 90 on pallets against the round bales and covered them with carport tarps (big) and RV tarps (massive). It wasn’t supposed to rain last night and I debated even stacking them so they could continue to dry out today. I kid you not the moment we finished (8:22pm) we saw lightening in the sky. It ended up pouring rain. God and I have been having a lot of ‘why’ conversations lately because sheesh it’s just coming at us. Last night was more of a thank you Lord!!!! kind of night. Thanks for that gut feeling telling me to stack & cover them despite thinking I would need to undo it this AM. Thank you Lord for the amazing kids I have. They are rockstars! I am always amazed by them. Sometimes I’m even amazed they can turn hay bales with me all day then stack them at night and still not figure out how to clean their rooms 😂. I think operation save the hay bales is working. Next rain coming today around 3, but I’ll keep an eye on it throughout the day.

There ya go. I find this accurate which is one reason why we’re so big on using all we can from our pigs. Honor the life, waste not want not, culinary creations in everything.

I will say I think hogs feed bill is greater than a cattle feed bill DEPENDING on how you raise them. I will say pigs take up less space than cattle so land is cheaper for pig farmers. Pros &
Cons. That’s not all profit because there’s a lot of cost in farming, but we love our breed, we love our genetics and we definitely bring the steak!

Yesterday wasn’t my favorite day. You see, we’re in hay season now and we’re square bale kind of people. Meaning we like to abuse our bodies and build our arm strength and be utterly exhausted.🥓🥓🥓In order to pay my tiny army I bought popsicles galore and fudge pops in abundance. I wanted the kids to get them as much as they wanted and whenever they wanted. Crunchy granola mom is out the door when there’s 700 square bales on steep slopes to load. They also get 💵, but when you’re in the suck of loading hay there’s not much better than a popsicle. We have a rule that the meat freezers are off limits and they even have latches on them and we have alarms for them that hook up to our phones.

Somehow in the suck of loading hay and working hard the main freezer was left wide open. Bye bye meat. It was left open at night and by morning it was not fit to be sold. We will take the loss because that’s all we can do.

Unfortunately/fortunately Sept & Oct are my 2 busiest months in regard to events. So, I MUST send some out ready or not. That is at a loss to be honest, but it is what it is. I called my processor and he is saving the day! I’m bringing in a batch on Sunday to get more going. I was recently on a group (still in the group) where they told an amazing farmer I’ve worked with that she couldn’t sell her meat because it was processed out of state. Mind you AZ only has 1 USDA processor in the entire state. Mind you the law is that in AZ if you want to sell cured meats (like charcuterie meats) your meat has to be processed at a USDA inspected facility and the law is if you sell across state lines, to a restaurant, or to a grocery store you need that USDA processor. So taking all that pig of the equation if I didn’t have a processor like I did I don’t think I would get squeezed in to bring a batch last minute for USDA processing. Find the processor you trust! One that has your back and one that is there to help you and be the farm that refers the heck out of them and works with them. I mean seriously grateful. The farmer/processor relationship is crucial to your success, crucial to what your community gets on their table and what you serve on your table. The processor can make or break us farmers. Find one of the good ones and travel far if that’s what’s needed to ensure you’re getting everything you need. We drive hours gladly with good music and strong coffee to ensure we get what we like and get to work with who we like.

After all that chaos my hay got rained on, my market was so windy I was holding onto my tent for dear life then it got closed because of the weather and then someone said they think they found our cat dead on the road (which I didn’t get an update about for hours)…it wasn’t, it was a skunk.

Not a good day.

Today is so much better. Hay is selling, no rain today, still a small amount of meat left from another freezer, loading day coming Saturday.

We will not be as responsive for a few days…it’s go time in the hay field. That’s about 700-800 bales the crew gets to load. I’m now SO glad we didn’t hay the other fields. I don’t think I’ve got it in me.

Who’s the crew you ask…my kids are ROCKSTARS!!!!! Earning, working, and oddly enough laughing and being a team.

My kids may be sassy, have days where they don’t know the definition of a clean room, and they might be a bit spoiled at times, but right now they are amazing hard workers who have made me so proud. Out in the field loading and unloading, driving the truck and honestly blowing me away with their greatness. I got lucky with them.
*if feet can touch the pedals they get to drive the farm truck.

My schedule is SLAMMED for the month of September and I have to figure out how I’m magically going to have more meat in stock. And then there is HAY! Do you have any idea how pumped I am that our hay got cut. I got home at dusk last night and there he was raking it and turning it because it’s nice and thick and all I could smell was the wonderful fresh cut hay smell. It’s a weird feeling to be honest. It’s different than the livestock aspect of farming. This is your actual land producing for you. Once it’s baled I will be moving pigs. I had been waiting because that’s what worked best for our plans for moving them. Excited to get a few of them into new grass and larger spaces. We’ve got the Meishan Conference 2026, A.M.B.A. Sponsored coming up and I couldn’t be more excited to gain knowledge, experience, community, and ya know…the FOOD!

If you know me you know I’m all about community so I can’t even think I could be as good of an asset to those I work with if I don’t take every opportunity to gain knowledge and gain the community to work with. Do you know this week alone 5 people reached out to me for Meishan piglets. Did you know this week I referred all people to other breeders I’ve worked with. Why in the world would I not take the sale myself???? Because my community matters. Because sometimes I’m not the best fit for someone. Because sometimes working together is the best way to work.

So, we’ll be there! With our notebook in hand, our phone charged up taking pics & videos and we’ll be there to chat with everyone else that can make it. We gain all the information we can and we will apply all we can to our program, our farm, and our Meishan herd to benefit our farm, Meishan’s, and our community.
