INGREDIENTS:
2 tbsp. butter
¼ to ½ cup jalapeño, seeded and small diced
½ cup canned corn, drained
One box Jiffy corn muffin mix
⅓ cup melted butter
¾ cup milk
Two eggs
2.5 tbsp. honey
Optional: more honey and flaky sea salt for topping
METHOD:
1️⃣Melt the two tablespoons of butter in a medium-sized sauté pan over medium heat
2️⃣Add corn and jalapeño, sweat until golden brown, set aside to cool
3️⃣Preheat the oven to 375 degrees
4️⃣Once the corn and jalapeño are at room temperature, mix them with the remaining ingredients in a medium-sized bowl, being careful not to over-mix
5️⃣Spray an 8-inch pie plate or tin with non-stick spray and pour the batter into it
6️⃣Bake for 20–25 minutes or until a toothpick comes out clean

BFC Client changed his mind and decided to get vaccinated after realizing the detrimental impact of the coronavirus. We are offering walk-up vaccines at our Southeast Center on Mondays and Wednesdays and at our Northwest Center on Tuesdays and Thursdays from 1-3 pm.
