Fredericksburg Regional Food Bank

Fredericksburg Regional Food Bank The Fredericksburg Regional Food Bank helps to provide nutritious food to over 31,000 people through our network of 160 community partners operating more than 260 food assistance programs.

We began our mission to end hunger in 1982 as the Fredericksburg Area Food Relief Clearinghouse. Those early years the Food Bank distributed a few thousand pounds of food. Today, the Fredericksburg Regional Food Bank distributes over 4 million pounds of food and other grocery products to over 31,000 people in our community.

We are catching our breath after a long day of service during our Turkeys & Toys distribution at the Fredericksburg Expo & Conference Center. We are delighted that well over 400 families benefitted from turkeys, toys, and many other food items to offer them some economic relief during the holiday season.

We are so proud of our volunteers and staff for working the distribution line for nearly six hours to provide that impact. What a privilege it was to know we were helping so many families!

We were honored that Rep. Rob Wittman joined the distribution effort as a volunteer and were pleased to have great volunteer support from UnitedHealthcare and SuperHits 95.9 WGRQ as well. Of course we enjoyed having Santa pay us a visit, too!

We hope all who participated today find some special meaning for their holiday season!

Sweet Potato and Carrot Soup

INGREDIENTS

1 tablespoon coconut oil
2 cups diced sweet onion
2 cloves garlic, minced
1 tablespoon minced fresh ginger
2 tablespoons red curry paste
4 cups vegetable broth
¼ cup almond butter
3 cups peeled and diced carrots
3 cups peeled and diced sweet potatoes
½ teaspoon sea salt
OPTIONAL: ¼ teaspoon cayenne pepper
1-13.5 ounce can coconut milk
to taste black pepper

METHOD

In a large soup pot, melt coconut oil over medium heat. Add onion, garlic, and ginger and saute for 5 minutes until onion is translucent. Stir in curry paste. In a small bowl, whisk almond butter with some broth until smooth. Add to pot, along with the rest of the broth, carrots, sweet potatoes, salt, and optional cayenne pepper. Stir and bring soup to a low boil over medium-high heat, then reduce heat to low. Cover soup pot and simmer for 20-30 minutes, until potatoes and carrots are fork tender. With an immersion blender, blend soup in the pot until smooth. If you have a regular blender, carefully blend soup in small batches, making sure to leave the lid ajar for steam to escape. Return all blended soup to the pot, over low heat, and stir in coconut milk. Add salt and pepper to taste. Soup can be served with fresh cilantro, almonds, and a squeeze of lime juice.
