August- Beat the Heat with Easy, No-Cook Meals!

When the temperatures climb, skip the stove and enjoy a refreshing, nutritious meal that comes together in minutes!

Mediterranean Chickpea Salad
Ingredients:
1 (15 oz.) can chickpeas, drained and rinsed
1 cup cucumber, diced
1 cup cherry tomatoes, halved
¼ cup crumbled feta cheese
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon dried oregano (or fresh parsley)
Salt and black pepper to taste

Directions:
Combine all ingredients in a large bowl and toss until evenly coated. Chill for 15–30 minutes if desired and serve on its own, over a bed of greens, or with whole grain pita.

Living a healthier life doesn't have to mean making drastic changes overnight. Taking a short walk, choosing more nutritious foods, drinking more water, and learning new ways to manage your health can all make a meaningful difference over time.
