ContainerSolutions is a Rhode Island-based company that turns storage containers into affordable, sustainable housing options. Recognizing that the issues of housing and food security are deeply intertwined, their 'Home to Table' initiative donates $5,000 to the Rhode Island Community Food Bank for every container home sold. 🏡

As the days grow longer and the weather trends warmer, you may find yourself craving lighter meals with more fresh produce. The Rhode Island Community Food Bank's Community Nutrition team develops delicious, seasonal recipes using cost-effective ingredients.

This Mediterranean Salad is packed with fresh veggies, protein, and healthy fats… and only costs $1.63 per serving. 💲Try it as a make-ahead weeknight side dish, or bring it to a Memorial Day get together.

Mediterranean Salad – makes 5 servings 🥒🍅

You'll need:
- 1 cucumber
- 2 tomatoes
- 1 bunch parsley
- 1 can of chickpeas
- 1 can of black olives
- 1/3 cup olive oil
- ¼ cup apple cider vinegar
- 2 tsp dijon mustard
- 2 tsp honey
- 2/3 cup feta cheese

1️⃣ Wash hands with soap and water.
2️⃣ Wash all fresh produce.
3️⃣ Chop cucumbers, tomatoes, and parsley. Combine in a bowl.
4️⃣ Drain and rinse olives and chickpeas and add to your bowl. Mix well.
5️⃣ Whisk together honey, olive oil, apple cider vinegar, and mustard.
6️⃣ Pour dressing mixture over your salad.
7️⃣ Serve and enjoy!

Last night, the RI Food Bank's Chief Philanthropy Officer, Dana DiMarco, testified before the House Finance Committee in support of H7259, legislation that would direct $3 million in additional funding to the Food Bank to purchase food for Rhode Islanders facing hunger.

Dana was joined by Dr. Alison Tovar, Vice President of the Rhode Island Community Food Bank Board of Directors, and Rachael LaPorte, Executive Director of member agency Rhode Island Center Assisting Those in Need (RICAN), both of whom also offered testimony in support of the bill. RI Capitol TV

Last month, we engaged the General Assembly in support of legislation that would allocate $3 million in additional funding to help feed Rhode Islanders. Now, it's time for the bill to be heard by the House Finance Committee.
